Apple Pie Oatmeal

1 apple, cored and chopped (skins on)
1 cup water
1/2 cup quick cooking oats
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg

Bring the water to a boil in a small saucepan. Then add the oats, apple, cinnamon, and nutmeg. The heat gets adjusted to low and the oatmeal is simmered for 2-3 minutes. That’s all there is to it. Serve it with a splash of soy milk.

Phyllo pies with mushroom and tomato fillings

10 large phyllo sheets (keep the unopened package in the refridgerator the night before to defrost)
about 100 g vegan margarine (unsalted)
100 g of vegan cheese (optional)
some olive oil
Mushroom filling
250 g mushrooms
1 small onion
3 cloves garlic
dried herbs - basil and other Mediterranean herbs
vegetable oil for frying
Tomato filling
1 small box of cherry tomatoes
dried herbs - basil and other Mediterranean herbs
vegetable oil for frying
1/2 tsp sugar

First prepare the fillings. Finely chop the onion, garlic and mushrooms and fry in oil. Add salt and herbs and mix. Fry until no more liquid comes out of the mushrooms. Place aside. Prepare the tomato filling. Heat some oil on a pan, add tomatoes and heat until the tomatoes break, pressing them gently. Add salt, sugar and herbs, mix and heat until the sauce thickens. Place aside. If using the cheese, grate it. Melt the margarine and preheat the oven.

Open the package of phyllo dough and gently place one sheet on a clean flat surface. Brush slightly with melted margarine. Place another sheet on top of it and brush again. Repeat until you have stacked 5 sheets on top fo each other. There are seveal ways to make the pies, here are two:

1) With a sharp knife, cut the dough in 8 equal parts. Place the mushroom filling in the middle of some squares and the tomato filling in the middle of others. Add some grated cheese on top if desired. Gather the edges of the squares into the center to form a purse.

2) With a sharp knife, cut the dough vertically in 4 equal strips. Place either filling in the middle of the lower part of the dough and top with some grated cheese if desired. Lift the bottom corner of the strip and cover the filling with it, forming a triangular shape. Keep folding the dough until you have reached the end. You should have 4 triangular pies.

Brush the pies slightly with olive oil and place on a baking sheet slightly greased with margarine. Bake in 200 degrees C for about 15 minutes or until the pies become golden brown. Serve warm.
